Currently, I have been at CEGEP for one year now, and I am studying in management of a catering establishment. This program brings us to the job market by teaching us all the facets of catering. We learn to cook, service and also management in general. It is for this reason that I chose this technique since we saw everything we need on the restoration. Now, after these three years of study, I have the choice between continuing my studies and going to the ITHQ or going to the job market.

After my technique, I have the knowledge to go to the job market and start my career in the field of catering. In this area there is a lot of option and a lot of work, So I have the choice between leaving my own company or going to work in a catering company which is already well-known.

Once at the ITHQ, the options available to me are numerous. The ITHQ is one of the very good schools for the catering and tourism sector, So I find two programs that interest me a lot, So either I am going to do a course in pastry making in order to improve my knowledge or else I am going to specialize in tourism and hotel management.

In the restaurant business, I have several options if I open my own company. I can open a restaurant, a caterer, a bistro and even cook in order to distribute my food in grocery stores, So either I open a caterer, or a restaurant of modern cuisine.

Fortunately I have a lot of job options, since there is a shortage of manpower in restoration. However, it is more difficult to find a good paying job which will allow me to live easily. I applied to the Renoir restaurant in Montreal, a very good restaurant, but they would only hire me as an assistant cook. The other option I was offered is to be the manager of one of the restaurants in the Cage aux sports restaurant chain.

Pastry is an area that I do not see at the Cegep de Saint-Jerome, so I told myself that I could try that maybe I would find a passion that I would prefer to manage, but after my course I Realized that I really didn't like it, so I decided to go back to my other option which was to do the tourism and hotel Management program.

I finally got my bachelor's degree in tourism and hotel management and I love all of my courses and now I can't wait to start working in this field, I'm finally specialized in what I love. So now, I hesitate between going to work in a big hotel in Estérel and being in charge of catering, or going to Manoir St-Sauveur and being in charge of administration.

The Renoir restaurant is an incredible restaurant, it is highly rated and it is an honor to work here. The position I am occupying is not my first choice, since I would like to occupy a more important position, but I am well-aware that I must climb the ladder. This situation puzzles me since I hesitate between staying and accelerating for years in order to get a better job, or go back to apply for the management position at La Cage aux Sports which is always available.

I love to run a restaurant, even more by being part of a large chain. I am well-integrated into the team, and I think I want to stay a long time. This gives me an additional challenge since there are large management positions at stake, which go to manage several restaurants. The big boss offers me to manage two additional restaurants, through the manager as I am currently. I am afraid, by accepting, that I will no longer find myself in the thick of the action. It is a very important decision that occupies my mind.

Opening a caterer was much more complex than I thought. It's more difficult, since you have to approach the world, it's not like a restaurant where you are visible and people come. After a few years, I had a contract with a golf club, which wanted me to take the concession with my caterer. Accepting this offer was one of the best I took, since I have a restaurant room in addition to the caterer, so I touched on several parts of the catering. Recently, I had two offers to take new concessions. I must now make a choice between taking the concession of a spa bistro or another golf club.

The process of opening my own restaurant with modern cuisine was incredible. I managed to build a clientele and promote my restaurant. However, I often tend to get tired of the routine and lose interest. The project allowed me to live a new experience, but I decided to sell my restaurant to another restaurateur. Once the restaurant is sold, I will take a year to travel and see what I would like for the future.

The Saint-Sauveur mansion is a beautiful place, the people are nice. However, I realized that the administration was not my strength. I made a lot of mistakes and I'm not sure I like it. This job makes me question my whole career. Finally is it well for me this domain? In this case I plan to leave soon, the decision that I have to make is if I take a year to travel and take the time to think about what I will do next or if I try to see s 'there I could always have the jobs that I had found at the Hotel Estérel.

The Estérel hotel is a bigger challenge than I would have thought, but I like that, I find that it keeps me from getting bored, like many jobs I have done in my life. Managing to cater in a tourist environment is everything I liked in my studies. Now that I have a stable job that I love, it is high time that I finally took the vacations available to me so that I can come back even more determined than ever.

I have often been told that taking a year to travel helps us to put our ideas in place. During my year, I toured Europe and I ended my trip by going to the French islands in the Caribbean. During my stay in Guadeloupe, I fell in love with everything there. I decided to settle on this island and open a bistro by the sea. For 5 years now I have been there and business has never been better!

I hesitated for a long time if I had to stay, I was afraid of losing my passion for cooking. Finally, the wait for a new position was worth it, I am now chef, 3 years later, chef of a renowned restaurant in Montreal. Now that I am satisfied with my work, I will take the vacation week to which I am entitled with my work, so that I can rest after these long years of work.

The spa concession is the perfect complement to what I was looking for. I'm busier, but business is going very well. It was my first year with this concession, and certainly not the last. This week, I'm taking a week off and going on a trip with my friends to relax.
